Palta rellena

Plaza de Armas, the main square of Cusco, is surrounded by arcades, on the upper floors of which you can find a number of cafés and restaurants. Stuffed avocado was one of our favourites, they call it palta rellena and we tasted many variations. Preparation is very simple, it takes only half an hour. According to one’s personal taste, ingredients can be varied. You can add shrimps or chicken, but it can also be a vegetarian option.

Palta rellena – stuffed avocado.  Vegetarian and meaty variations both egxist

Ingredients (Serves 1):

  • 1 avocado
  • 2 tbsp. steamed green peas
  • 2 tbsp. steamed carrot, diced
  • 2 tbsp. steamed potatoes, diced
  • 2 tbsp. mayonnaise
  • 1 tsp. of mustard
  • salt, pepper, coriander leaves (can be dried)
  • 1 lemon or lime
  • optional: cleaned and cooked shrimps, grilled chicken (diced)

Directions:

Steam the vegetables and let them cool. Peel the avocado, then remove the pit using a spoon. Scoop out some more avocado that you will mash in small mixing bowl. Mix it with mayonnaise, some mustard, salt and pepper. Squeeze a whole lemon or lime into the mixture, and make it creamy. Add the steamed vegetables, too, and stir the filling to combine ingredients. Spoon it into the avocado halves. Garnish with coriander or parsley. Some slices of tomato on a salad leaf also go well with this dish. The optional ingredients can be put into the filling with the vegetables. For bread-lovers, it can be served with a piece of toast.
